Kimchi is a eye brow raising spicy Korean dish.,
the cabbage, spices etc… are fermented underground… (much like beer lagers are fermented in cold areas of Europe and North America).
Eating Kimchi alone is a risky venture… can lead to headaches.
Personally prefer I kimchi with a meat… a more pleasurable meal: the sauce tames some of the spices for the pallet .
